  • 4 boneless, skinless chicken breasts
  • 2 sheets puff pastry (thawed)
  • 3 tbsp smooth Dijon mustard
  • 1 cup heavy cream
  • 2 tbsp fresh thyme (chopped)
  • 2 tbsp fresh parsley (chopped)
  • 4 cloves garlic (minced)
  • 4 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper.
  3. In a skillet, melt butter over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove chicken from skillet.
  4. Add minced garlic to the skillet and sauté until fragrant. Stir in heavy cream and Dijon mustard, mixing well.
  5. Roll out puff pastry on a floured surface and place seared chicken in the center. Spoon some of the sauce over the chicken, then wrap the pastry around it like a present.
  6. Place wrapped Wellingtons on a baking tray lined with parchment paper and bake for 25-30 minutes until golden brown.
