- 2 sheets puff pastry (thawed)
- 3 tbsp smooth Dijon mustard
- 1 cup heavy cream
- 2 tbsp fresh thyme (chopped)
- 2 tbsp fresh parsley (chopped)
- 4 cloves garlic (minced)
- 4 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken breasts with salt and pepper.
- In a skillet, melt butter over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove chicken from skillet.
- Add minced garlic to the skillet and sauté until fragrant. Stir in heavy cream and Dijon mustard, mixing well.
- Roll out puff pastry on a floured surface and place seared chicken in the center. Spoon some of the sauce over the chicken, then wrap the pastry around it like a present.
- Place wrapped Wellingtons on a baking tray lined with parchment paper and bake for 25-30 minutes until golden brown.
