- 1 (4-6 lb) bone-in Prime Rib Roast
- 5 cloves Garlic, minced
- 2 sprigs Fresh Rosemary, chopped
- 4 sprigs Fresh Thyme leaves
- 3 tbsp Olive Oil
- 2 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 cup Low-Sodium Beef Broth
- ½ cup Dry Red Wine
Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub generously over the prime rib.
- Place the roast bone-side down in a roasting pan and sear for 15 minutes at 450°F.
- Lower the oven temperature to 325°F (160°C) and continue cooking until the internal temperature reaches 130°F (54°C) for medium-rare (about 1.5 hours).
- Remove from oven and let rest for 20-30 minutes before slicing.
- For the au jus, pour off excess fat from the pan drippings and add red wine and beef broth. Simmer until slightly thickened.
- Serve slices of prime rib with au jus.
