  • 1 (4-6 lb) bone-in Prime Rib Roast
  • 5 cloves Garlic, minced
  • 2 sprigs Fresh Rosemary, chopped
  • 4 sprigs Fresh Thyme leaves
  • 3 tbsp Olive Oil
  • 2 tsp Kosher Salt
  • 1 tsp Black Pepper
  • 1 cup Low-Sodium Beef Broth
  • ½ cup Dry Red Wine

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub generously over the prime rib.
  3. Place the roast bone-side down in a roasting pan and sear for 15 minutes at 450°F.
  4. Lower the oven temperature to 325°F (160°C) and continue cooking until the internal temperature reaches 130°F (54°C) for medium-rare (about 1.5 hours).
  5. Remove from oven and let rest for 20-30 minutes before slicing.
  6. For the au jus, pour off excess fat from the pan drippings and add red wine and beef broth. Simmer until slightly thickened.
  7. Serve slices of prime rib with au jus.
