  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs (plain or Italian)
  • ½ cup ketchup (divided)
  • 2 large eggs
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with parchment paper or cooking spray.
  2. In a skillet, sauté the chopped onion in olive oil over medium heat until golden brown (5-7 minutes).
  3. In a large bowl, combine ground beef, breadcrumbs, eggs, sautéed onions, minced garlic, salt, pepper, parsley, and half of the ketchup; mix gently.
  4. Shape the mixture into a loaf in the prepared pan and spread the remaining ketchup on top.
  5. Bake for about 1 hour or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.
