Ingredients

  • 3 lbs pork shoulder
  • 1 cup cranberry sauce
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 large sweet onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 8 soft slider buns
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Season pork shoulder with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork until golden brown, about 4–5 minutes per side.
  2. 2. Remove the pork and sauté onions and garlic in the same pan until translucent (3–4 minutes).
  3. 3. In a bowl, mix cranberry sauce, chipotle peppers, and apple cider vinegar until smooth.
  4. 4. Place the seared pork in a slow cooker, pour the sauce over it, cover, and cook on low for 8 hours or high for 4 hours until tender.
  5. 5. Shred the pork with two forks and mix it back into the juices. Serve on slider buns with optional coleslaw or pickles.
