- 3 lbs pork shoulder
- 1 cup cranberry sauce
- 2 chipotle peppers in adobo sauce, chopped
- 1 large sweet onion, chopped
- 4 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 8 soft slider buns
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- 1. Season pork shoulder with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the pork until golden brown, about 4–5 minutes per side.
- 2. Remove the pork and sauté onions and garlic in the same pan until translucent (3–4 minutes).
- 3. In a bowl, mix cranberry sauce, chipotle peppers, and apple cider vinegar until smooth.
- 4. Place the seared pork in a slow cooker, pour the sauce over it, cover, and cook on low for 8 hours or high for 4 hours until tender.
- 5. Shred the pork with two forks and mix it back into the juices. Serve on slider buns with optional coleslaw or pickles.
