  • 8 oz fettuccine
  • 2 salmon fillets (6 oz each)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and reserve 1 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Stir in spinach until wilted.
  3. Add salmon fillets to the skillet and cook for 4-5 minutes on each side until browned and cooked through. Remove from skillet and flake into bite-sized pieces.
  4. Pour heavy cream into the skillet along with lemon juice, stirring well. Gradually add grated Parmesan cheese, mixing until melted.
  5. Return flaked salmon and drained pasta to the skillet; toss gently, adding reserved pasta water to achieve desired creaminess.
  6. Serve immediately with an extra sprinkle of Parmesan cheese.
