  • 2 large Russet potatoes (about 1 lb), peeled and diced
  • 4 corn tortillas
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt to taste
  • Fresh cilantro, diced onions, salsa, and cheese for topping
  • Lime wedges for serving

Instructions

  1. Peel and dice the potatoes into small cubes. Rinse under cold water to remove excess starch.
  2. In a large bowl, toss the diced potatoes with olive oil, cumin, paprika, garlic powder, and salt until well coated.
  3. Heat a skillet over medium heat. Add seasoned potatoes and cook for 15-20 minutes or until golden brown and crispy, stirring occasionally.
  4. While cooking the potatoes, warm corn tortillas in another pan or microwave.
