- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 cups low-sodium chicken broth
- 1 (28 oz) can crushed tomatoes
- 1 cup heavy cream
- 2 tsp Italian seasoning
- 1 cup freshly grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Trim excess fat from chicken breasts and rinse under cold water.
- Sauté diced onion and minced garlic in olive oil until translucent.
- Layer chicken breasts in the crockpot and pour in chicken broth, crushed tomatoes, heavy cream, Italian seasoning, salt, and pepper.
- Cover and cook on low for 6 hours or high for 3 hours until chicken is easily shredded with a fork.
- In the last 30 minutes of cooking, stir in grated Parmesan cheese until melted; add chopped basil just before serving.
- Serve in bowls garnished with more Parmesan and crusty bread.
