  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 (28 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 2 tsp Italian seasoning
  • 1 cup freshly grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Trim excess fat from chicken breasts and rinse under cold water.
  2. Sauté diced onion and minced garlic in olive oil until translucent.
  3. Layer chicken breasts in the crockpot and pour in chicken broth, crushed tomatoes, heavy cream, Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6 hours or high for 3 hours until chicken is easily shredded with a fork.
  5. In the last 30 minutes of cooking, stir in grated Parmesan cheese until melted; add chopped basil just before serving.
  6. Serve in bowls garnished with more Parmesan and crusty bread.
