- 2 lbs boneless beef chuck roast
- 6 cloves fresh garlic, minced
- 4 dried guajillo chiles, toasted
- 1 medium onion, chopped
- 2 tsp dried oregano
- 2 cups shredded cheddar cheese
- 8 oz tortilla chips
- ½ cup sour cream
- ¼ cup fresh cilantro, chopped
- 1 fresh jalapeño, sliced
Instructions
- Soak the dried guajillo chiles in hot water until soft. Blend with garlic, onion, oregano, salt, and pepper until smooth.
- In a large pot or Dutch oven over medium heat, brown the beef chuck roast on all sides.
- Pour the blended sauce over the beef and add enough water to cover by one inch. Bring to a simmer and cover.
- Reduce heat to low and let simmer for 3-4 hours until the meat is tender enough to shred.
- Preheat oven to 375°F (190°C). Spread tortilla chips on a baking sheet.
- Shred the cooked beef with two forks and layer generously over the chips with cheddar cheese on top.
- Bake for about 10 minutes until the cheese melts.
- Remove from oven and finish with sliced jalapeños, sour cream, and fresh cilantro.
