Description

Tender, slow-cooked beef is layered over crispy tortilla chips and topped with gooey cheese, fresh jalapeños, and a dollop of sour cream.   • 2 lbs boneless beef chuck roast
  • 6 cloves fresh garlic, minced
  • 4 dried guajillo chiles, toasted
  • 1 medium onion, chopped
  • 2 tsp dried oregano
  • 2 cups shredded cheddar cheese
  • 8 oz tortilla chips
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • 1 fresh jalapeño, sliced

Instructions

  1. Soak the dried guajillo chiles in hot water until soft. Blend with garlic, onion, oregano, salt, and pepper until smooth.
  2. In a large pot or Dutch oven over medium heat, brown the beef chuck roast on all sides.
  3. Pour the blended sauce over the beef and add enough water to cover by one inch. Bring to a simmer and cover.
  4. Reduce heat to low and let simmer for 3-4 hours until the meat is tender enough to shred.
  5. Preheat oven to 375°F (190°C). Spread tortilla chips on a baking sheet.
  6. Shred the cooked beef with two forks and layer generously over the chips with cheddar cheese on top.
  7. Bake for about 10 minutes until the cheese melts.
  8. Remove from oven and finish with sliced jalapeños, sour cream, and fresh cilantro.
