  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or applesauce)
  • 1 tsp vanilla extract
  • 1 cup grated carrots (fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine eggs, vegetable oil, and vanilla extract. Whisk until smooth.
  4. Stir in the grated carrots into the wet mixture.
  5. Gently fold the wet ingredients into the dry ingredients until just combined.
  6. Fill each muffin cup about two-thirds full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool completely on wire racks before frosting with cream cheese frosting.
