  • 1.5 lbs Yukon Gold potatoes, quartered

  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 3 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
