  • 4 (6 oz) fresh sole or tilapia fillets
  • 1 cup sliced or slivered almonds
  • 4 tbsp unsalted butter
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Gather and rinse the fish fillets, then pat them dry.
  2. In a dry skillet over medium heat, toast the almonds for about 5 minutes until golden brown.
  3. In the same skillet, melt 2 tablespoons of butter over low heat and mix with lemon juice.
  4. Season both sides of the fish with salt and pepper; press into toasted almonds to coat.
  5. Heat remaining butter in the skillet over medium heat; cook coated fish for 3-4 minutes per side until golden and cooked through.
  6. Drizzle leftover butter sauce over the fish and sprinkle with parsley before serving.
