Description

  • 4 medium russet or Yukon Gold potatoes
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, crushed
  • 2 sprigs of fresh rosemary or thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Wash and dry the potatoes.
  2. Slice each potato about 1/8 inch apart, ensuring they remain intact at the bottom.
  3. Drizzle olive oil over the potatoes, massaging it into the cuts. Season with salt and pepper.
  4. Tuck garlic pieces and herb sprigs into the potato slits.
  5. Arrange on a parchment-lined baking sheet and roast for 40-50 minutes until crispy outside and tender inside.
  6. If desired, sprinkle Parmesan cheese over the potatoes in the last 10 minutes of baking.
