Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water (adjust as needed)
  • 2 medium starchy potatoes (about 1 cup mashed)
  • 1 cup cottage cheese (or farmer's cheese)
  • 1/2 medium onion, finely chopped
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Sour cream for serving (optional)

Instructions

  1. Prepare the dough: In a bowl, mix flour and a pinch of salt. Create a well in the center, beat in the egg, then gradually add water until combined.
  2. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover and let rest while preparing filling.
  3. Make the filling: Boil potatoes until tender, then mash while hot. Mix in cottage cheese, sautéed onions, salt, and pepper.
  4. Shape pierogi: Roll out dough thinly and cut into circles. Place about one tablespoon of filling on each circle, fold over, and seal edges tightly.
  5. Cook pierogi: Boil salted water in a pot; drop in pierogi in batches until they float (about 3-5 minutes). Remove with a slotted spoon.
  6. Sauté pierogi: In a skillet over medium heat, melt butter and sauté boiled pierogi until golden brown on both sides. Serve warm with sour cream if desired.
