  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ¼ cup fresh basil or parsley, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by dicing the chicken and mincing the garlic.
  2. Cook pasta in salted boiling water until al dente. Drain, reserving some pasta water.
  3. In a skillet over medium heat, heat olive oil and sear chicken until golden brown. Remove from pan.
  4. Sauté garlic in the same skillet until fragrant. Gradually add heavy cream and scrape up brown bits.
  5. Stir in Parmesan cheese until melted. Season with salt and pepper.
  6. Return chicken to the skillet along with cooked pasta; toss everything together, adding reserved pasta water for creaminess.
  7. Serve immediately garnished with fresh herbs.
