- 1 lb lean ground beef
- 1 packet taco seasoning (about 1 oz)
- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sour cream (or Greek yogurt)
- 1 cup chopped lettuce
- 1 cup diced tomatoes
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish with nonstick spray.
- In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and stir in taco seasoning.
- Layer corn tortillas at the bottom of the baking dish. Spoon half the seasoned beef mixture over them, followed by black beans and half of the cheese. Repeat layers until all ingredients are used.
- Bake for 25-30 minutes until the cheese is bubbly and golden brown.
- Let sit for 5 minutes before serving. Top with lettuce, tomatoes, and sour cream.
