  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 cups Yukon Gold potatoes, peeled and cubed
  • 2 cups fresh broccoli florets
  • Salt and pepper, to taste
  • Fresh parsley (optional), for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets skin-side down on the baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. In a small saucepan over medium heat, melt butter. Add minced garlic and sauté until fragrant (about 1 minute).
  4. Stir in fresh lemon juice and pour the mixture evenly over salmon fillets.
  5. Bake for 12-15 minutes or until the salmon flakes easily with a fork.
  6. Meanwhile, boil potatoes in salted water until tender (15-20 minutes). Drain and mash with butter, milk, salt, and pepper.
  7. Steam broccoli until bright green but still crisp (about 4-5 minutes).
  8. Serve salmon with mashed potatoes and broccoli; drizzle extra sauce over the top if desired.
