Instructions

  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  3. Beat in the egg, lemon juice, and lemon zest until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt; gradually mix into the wet ingredients until just combined.
  5. Gently fold in the raspberries.
  6. Scoop rounded tablespoons of dough onto prepared baking sheets, spacing them about two inches apart.
  7. Bake for 12-15 minutes or until edges are golden brown but centers remain soft.
  8. Allow cookies to cool on the baking sheets for about 5 minutes before transferring to wire racks.
