 - ¾ cup granulated sugar
 - 3 large eggs, room temperature
 - 2 tsp pure vanilla extract
 - ¼ tsp salt
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a bowl, combine graham cracker crumbs and melted butter until well mixed. Press firmly into the bottom of a 9-inch springform pan and bake for about 10 minutes. Let cool.
 - Melt the white chocolate in a microwave-safe bowl in 20-second intervals, stirring until smooth.
 - In another bowl, beat the cream cheese until smooth. Gradually add sugar, then mix in sour cream and melted white chocolate.
 - Add eggs one at a time, mixing gently to avoid overmixing. Incorporate lemon juice, zest, and vanilla extract.
 - Pour the filling over the cooled crust and bake at 325°F (160°C) for 50-60 minutes until edges are set but center is slightly jiggly.
 - Allow to cool gradually before refrigerating for at least four hours or overnight.
