Ingredients

Scale
  • 1 cup sweet rice flour (Mochiko)
  • 2 tbsp matcha powder
  • 3 tbsp granulated sugar (adjust to taste)
  • 1/2 cup water (filtered if possible)
  • 1 cup ice cream (flavor of choice)

Instructions

  1. Prepare your workspace by clearing your kitchen counter and gathering necessary tools.
  2. In a bowl, mix sweet rice flour, matcha powder, and sugar. Gradually stir in water until smooth.
  3. Transfer the mixture to a microwave-safe bowl, cover with plastic wrap, and microwave for 1 minute. Stir and microwave for another minute until thickened.
  4. Allow the dough to cool slightly before kneading it for about five minutes using cornstarch to prevent sticking.
  5. Divide the dough into small portions, flatten each piece, place a spoonful of ice cream in the center, and fold to seal.
  6. Freeze the mochi balls on a parchment-lined tray for at least two hours until firm.
