- 2 tbsp Dijon mustard
- 1 tsp fresh thyme (chopped)
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Finely chop mushrooms and thyme.
- Sear beef tenderloin in oil over medium-high heat for 1-2 minutes per side until browned; set aside.
- In the same skillet, cook mushrooms until browned and moisture evaporates (5-7 minutes). Add thyme, salt, and pepper.
- Roll out puff pastry on a floured surface; cut into squares.
- Place seared beef on pastry squares, spread mustard on top, and spoon mushroom mixture over it.
- Fold pastry corners over the beef; pinch to seal tightly. Brush with beaten egg.
- Bake for 20-25 minutes until golden brown and puffed.
