Ingredients

  • 34 lbs chuck roast
  • 1 packet ranch dressing mix (1 oz)
  • 1 packet au jus gravy mix (1 oz)
  • 6 sliced pepperoncini peppers
  • 1 cup beef broth
  • Optional: 2 cups carrots and potatoes (chopped)

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. Heat oil in a skillet over medium-high heat and sear each side of the roast for about 4-5 minutes until golden brown.
  3. In a bowl, mix the ranch dressing and au jus gravy packets. Sprinkle evenly over the roast.
  4. Pour beef broth over the roast and top with sliced pepperoncini.
  5. Place in a slow cooker on low for 6-8 hours or high for 4-5 hours until fork-tender.
  6. Shred the meat with two forks directly in the pot and serve over mashed potatoes or as a sandwich.
