Description

Mushroom and Spinach Lasagna Roll Ups offer a delightful fusion of earthy flavors wrapped in tender pasta and topped with gooey cheese. Ingredients

  • 9 lasagna noodles
  • 2 cups baby bella mushrooms, chopped
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup shredded part-skim mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  2. In a skillet over medium heat, add olive oil and sauté garlic until fragrant. Add mushrooms and spinach, cooking until softened.
  3. In a bowl, mix sautéed vegetables with ricotta, half of the mozzarella, Italian seasoning, salt, and pepper.
  4. Spread marinara sauce on each noodle, place about 2 tablespoons of filling on one end, then roll tightly. Place seam-side down in a greased baking dish.
  5. Pour remaining marinara sauce over roll-ups and top with remaining mozzarella and Parmesan cheese.
  6. Preheat oven to 375°F (190°C). Cover with foil and bake for 25 minutes; then remove foil and bake an additional 10-15 minutes until bubbly.
