  • 1 ½ cups crushed chocolate cookies
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 cups whipped topping (stabilized)
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup crushed candy canes

Instructions

  1. Create the crust by mixing crushed chocolate cookies with melted butter. Press firmly into a 9-inch springform pan. Chill while preparing the filling.
  2. Beat cream cheese and sugar until smooth. Fold in whipped topping gently.
  3. Mix in peppermint extract and half of the crushed candy canes.
  4. Melt chocolate chips in intervals until smooth; layer half over the crust, followed by half of the cheesecake mixture.
  5. Repeat layering with remaining cheesecake and melted chocolate. Top with remaining crushed candy canes.
  6. Refrigerate for at least four hours or overnight to set before serving.
