  • 2 cups powdered sugar (240g)
  • 1/2 cup creamy peanut butter (125g)
  • 1 tsp vanilla extract (5ml)
  • Optional: 1/4 cup chopped nuts (30g) or 1/4 cup sweetened coconut flakes (30g)

Instructions

  1. Bake the potato at 400°F (200°C) for 45-60 minutes until tender. Allow to cool and peel.
  2. Mash the cooled potato in a bowl until smooth.
  3. Gradually mix in powdered sugar, peanut butter, and vanilla extract until fully combined.
  4. Dust your countertop with powdered sugar and roll out the mixture into a rectangle about half an inch thick. Cut into squares or desired shapes.
  5. If using toppings, sprinkle chopped nuts or coconut flakes over half of the pieces and gently press them in.
  6. Chill on wax paper for at least two hours or until firm before serving.
