  • 1 cup granulated sugar
  • 1 cup brown sugar, packed (dark preferred)
  • 2 cups all-purpose flour, sifted
  • 2 cups toasted pecans, roughly chopped
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 cup light corn syrup
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the butter and granulated sugar until fluffy (about 3-4 minutes).
  3. Gradually mix in the all-purpose flour and salt until the mixture resembles coarse crumbs.
  4. Press this mixture evenly into the prepared baking pan and bake for 15 minutes until lightly golden.
  5. In another bowl, whisk together eggs, brown sugar, corn syrup, vanilla extract, and chopped pecans until well combined.
  6. Pour the filling over the baked crust evenly and return to the oven for an additional 25-30 minutes, or until set.
  7. Let cool before slicing into squares or rectangles. Serve warm or at room temperature.
