Ingredients
Scale
- 2 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 tsp baking powder
- 1 cup unsalted butter (softened)
- 2 large eggs (room temperature)
- 2 tsp vanilla extract
- 1/2 tsp peppermint extract
- 1/3 cup unsweetened cocoa powder
- 1 tbsp red food coloring (gel)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time and mix in vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
- Divide the dough into two portions: keep one plain and mix peppermint extract and red food coloring into the other half until vibrant.
- Roll small pieces of each dough into logs, twist them together, and shape into a log. Chill in the fridge for 30 minutes.
- Slice the chilled dough into rounds about an inch thick and place on prepared baking sheets. Bake for 10-12 minutes until edges are golden but centers remain soft.
