  • 1/2 cup brown sugar (packed)
  • 1 tsp baking powder
  • 1 cup unsalted butter (softened)
  • 2 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1/2 tsp peppermint extract
  • 1/3 cup unsweetened cocoa powder
  • 1 tbsp red food coloring (gel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time and mix in vanilla extract until combined.
  3. In another bowl, whisk together flour, baking powder, cocoa powder, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
  4. Divide the dough into two portions: keep one plain and mix peppermint extract and red food coloring into the other half until vibrant.
  5. Roll small pieces of each dough into logs, twist them together, and shape into a log. Chill in the fridge for 30 minutes.
  6. Slice the chilled dough into rounds about an inch thick and place on prepared baking sheets. Bake for 10-12 minutes until edges are golden but centers remain soft.
