  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup fresh basil pesto (store-bought or homemade)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 2 tbsp melted butter
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 tbsp olive oil or butter for cooking

Instructions

  1. In a bowl, whisk together flour, eggs, milk, and melted butter until smooth. Let the batter rest.
  2. Season chicken with salt and pepper. In a skillet over medium heat, cook chicken in olive oil for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and let cool before slicing.
  3. Toss the sliced chicken in basil pesto until well-coated.
  4. Heat a nonstick pan over medium heat and add butter. Pour a ladle of crepe batter into the pan, swirl to coat evenly, and cook for 1-2 minutes until lightly browned before flipping.
  5. Place the pesto chicken down the center of each crepe, sprinkle with cheese, fold sides over filling, and serve.
