- 1 cup digestive biscuits, crushed
- 4 tbsp unsalted butter, melted
- 8 oz full-fat cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1/2 cup unsalted pistachios, chopped
- 1 cup fresh raspberries
- 1 tsp vanilla extract
- 1 tbsp gelatin powder
- 2 tbsp warm water
- 1/4 cup powdered sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C). Mix crushed digestive biscuits with melted butter and press into the bottom of dome molds.
- Beat cream cheese until smooth; gradually add sugar and sour cream, mixing until creamy.
- Stir in chopped pistachios and vanilla extract; gently fold in fresh raspberries.
- Dissolve gelatin in warm water and cool slightly before adding it to the mixture.
- Spoon the cheesecake filling into molds and smooth the tops. Refrigerate for at least four hours or until set.
