Description

Pistachio & Raspberry Cheesecake Domes offer a delightful blend of creamy cheesecake, crunchy pistachios, and tart raspberries, creating an exquisite dessert perfect for any occasion.


Ingredients

  • 1 cup digestive biscuits, crushed
  • 4 tbsp unsalted butter, melted
  • 8 oz full-fat cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1/2 cup unsalted pistachios, chopped
  • 1 cup fresh raspberries
  • 1 tsp vanilla extract
  • 1 tbsp gelatin powder
  • 2 tbsp warm water
  • 1/4 cup powdered sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Mix crushed digestive biscuits with melted butter and press into the bottom of dome molds.
  2. Beat cream cheese until smooth; gradually add sugar and sour cream, mixing until creamy.
  3. Stir in chopped pistachios and vanilla extract; gently fold in fresh raspberries.
  4. Dissolve gelatin in warm water and cool slightly before adding it to the mixture.
  5. Spoon the cheesecake filling into molds and smooth the tops. Refrigerate for at least four hours or until set.
