  • 1 cup mascarpone cheese
  • 1/2 cup espresso or strong coffee, cooled
  • 1/4 cup granulated sugar
  • 1 cup heavy cream
  • 1/2 cup unsalted roasted pistachios, chopped
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Brew a strong cup of espresso or coffee; let cool.
  2. In a bowl, whip heavy cream until stiff peaks form.
  3. In another bowl, combine mascarpone cheese and sugar. Gently fold in whipped cream.
  4. Briefly dip each ladyfinger into cooled coffee; layer in a serving dish.
  5. Spread half of the mascarpone mixture over ladyfingers; sprinkle half of the chopped pistachios.
  6. Repeat layers and refrigerate for at least 4 hours or overnight before serving.
