- In a small bowl, beat cream cheese with a tablespoon of sugar until creamy.
- Fill muffin cups two-thirds full with batter. Add a dollop of cream cheese filling in the center and top with more batter.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool for five minutes before transferring to a wire rack.
