  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar

  • 2 large eggs
  • ⅓ cup vegetable oil
  • 4 oz cream cheese, softened
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or nonstick spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, sugar, eggs, vegetable oil, and vanilla until smooth.
  4. In a small bowl, beat cream cheese with a tablespoon of sugar until creamy.
  5. Fill muffin cups two-thirds full with batter. Add a dollop of cream cheese filling in the center and top with more batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Cool for five minutes before transferring to a wire rack.
