  • 1/2 cup brown sugar (packed)
  • 1/2 cup unsalted butter (softened)
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 large egg (room temperature)
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in pumpkin puree and egg until well combined.
  4. In another bowl, sift together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto parchment-lined baking sheets.
  6. Bake for 12-15 minutes until edges are set but centers remain soft. Cool on the baking sheet before transferring to a wire rack.
