  • 4 large eggs (room temperature)
  • 1 cup whole milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup heavy cream
  • 2 tsp pumpkin spice blend
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In one bowl, whisk together flour, baking powder, cinnamon, and pumpkin spice.
  3. In another bowl, beat sugar and eggs until pale; mix in pumpkin puree. Fold in dry ingredients gently.
  4. Pour batter into prepared dish and bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. Combine whole milk, sweetened condensed milk, evaporated milk, and vanilla in a bowl. Poke holes in cooled cake and pour milk mixture over it.
  6. Whip heavy cream until soft peaks form; spread over the soaked cake before serving.
