  • 2 tbsp red food coloring (gel)
  • 1 tsp vanilla extract
  • 3 large eggs
  • 8 oz cream cheese (for frosting)
  • 1/4 cup powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan (15×10 inches) with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, mix sugar and vegetable oil until combined. Beat in eggs one at a time, then add buttermilk and vanilla extract; mix until smooth.
  4. Stir in red food coloring until fully incorporated. Gradually add dry ingredients to wet ingredients; mix until just combined.
  5. Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes or until a toothpick comes out clean.
  6. Let cool slightly, then flip onto a powdered sugar-dusted kitchen towel and roll tightly while warm.
  7. Once cooled completely, unroll gently and spread cream cheese frosting over the surface before rolling back up.
  8. Chill the cake roll for about an hour before slicing.
