  • 4 cups mixed salad greens
  • 1 medium cucumber, sliced
  • 1 cup shredded carrots
  • 2 tablespoons toasted sesame seeds
  • 2 green onions, thinly sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar (unseasoned)
  • 2 tablespoons sesame oil
  • 1 tablespoon honey (adjust to taste)
  • 1 teaspoon fresh ginger, grated

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper; cook for about 6-7 minutes per side until golden brown and fully cooked.
  2. While chicken cooks, wash and prepare mixed greens. Slice cucumbers and shred carrots.
  3. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and grated ginger until smooth.
  4. Once the chicken has cooled slightly, slice it into strips. In a large bowl, mix greens with cucumbers, carrots, green onions, and chicken pieces.
  5. Drizzle dressing over the salad mixture and toss gently to coat. Garnish with toasted sesame seeds before serving.
