- 1 cup Arborio rice
- 1 lb shrimp (peeled and deveined)
- 4 cups low-sodium vegetable broth
- 1 cup fresh peas
- 1/2 cup grated Parmesan cheese
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1/2 cup dry white wine
- 2 tbsp butter
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic until translucent.
- Add Arborio rice, stirring continuously for 1-2 minutes until slightly translucent.
- Pour in white wine and simmer until mostly evaporated.
- Gradually add vegetable broth one ladle at a time, stirring frequently until absorbed, about 18-20 minutes.
- In the last few minutes of cooking, stir in shrimp and fresh peas until shrimp are pink.
- Remove from heat and mix in butter and Parmesan cheese until melted. Season with salt and pepper.
- Serve hot, garnished with extra Parmesan if desired.
