Ingredients

  • 1 cup Arborio rice
  • 1 lb shrimp (peeled and deveined)
  • 4 cups low-sodium vegetable broth
  • 1 cup fresh peas
  • 1/2 cup grated Parmesan cheese
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup dry white wine
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large saucepan over medium heat. Sauté the chopped onion and minced garlic until translucent.
  2. Add Arborio rice, stirring continuously for 1-2 minutes until slightly translucent.
  3. Pour in white wine and simmer until mostly evaporated.
  4. Gradually add vegetable broth one ladle at a time, stirring frequently until absorbed, about 18-20 minutes.
  5. In the last few minutes of cooking, stir in shrimp and fresh peas until shrimp are pink.
  6. Remove from heat and mix in butter and Parmesan cheese until melted. Season with salt and pepper.
  7. Serve hot, garnished with extra Parmesan if desired.
