  • 1 lb ribeye or sirloin steak
  • 1 bunch fresh asparagus (about 1 lb), trimmed
  • 1 lb baby potatoes, halved
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Wash the asparagus and potatoes thoroughly. Trim the ends of the asparagus and halve the baby potatoes.
  2. Heat a large skillet over medium-high heat and add olive oil until shimmering.
  3. Season the steak generously with salt and pepper. Sear for 4-5 minutes on each side until desired doneness is reached.
  4. In the last two minutes of cooking, add minced garlic and butter to the skillet, infusing flavor into both the steak and veggies.
  5. Remove the steak from the skillet to rest. Add halved potatoes cut side down along with asparagus. Sauté for 8-10 minutes until golden brown and tender.
  6. Return the steak to the skillet to warm through before plating.
