Ingredients

  • 2 cups yellow squash, sliced
  • 2 cups zucchini, sliced
  • 1 medium onion, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 2 large eggs, beaten
  • 1 cup Panko breadcrumbs (divided)
  • 4 tbsp butter (melted)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash and slice yellow squash and zucchini into thin rounds.
  3. In a skillet over medium heat, melt butter and sauté onions until translucent (about 5 minutes).
  4. In a large bowl, combine sautéed onions with sliced squash, zucchini, beaten eggs, cheddar cheese, salt, pepper, and half the breadcrumbs; mix well.
  5. Grease a baking dish with butter or cooking spray and pour in the mixture evenly.
  6. Top with remaining breadcrumbs and drizzle with melted butter.
  7. Bake for 30-35 minutes until golden brown and bubbling.
