Instructions
- Rinse sushi rice under cold water until clear; cook according to package instructions using 1¼ cups water.
- After cooking, cool the rice slightly and mix in rice vinegar and a pinch of salt.
- Heat oil in a skillet over medium heat; cook shrimp until pink and opaque, about 3-4 minutes per side.
- Toss cooked shrimp with Sriracha sauce and lime juice while warm; set aside.
- In small bowls or molds, layer sushi rice, followed by avocado slices, cucumber, and then the shrimp mixture.
- Garnish with sesame seeds and lift out from molds for presentation.
