  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 cups fresh strawberries, chopped
  • 1 tbsp lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until it resembles wet sand. Press into the bottom of a springform pan.
  2. Bake crust for about 10 minutes. Let cool completely.
  3. In a large bowl, beat softened cream cheese until smooth. Add sour cream, sugar, vanilla extract, and lemon juice; mix until silky smooth.
  4. Gently fold in chopped strawberries until evenly distributed.
  5. Pour filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes or until the center is slightly jiggly.
  6. Turn off oven and leave cheesecake inside with door ajar for an hour to cool gradually. Chill in the refrigerator for at least four hours before serving.
