  • 1 can (13.5 oz) full-fat coconut milk
  • 3 tbsp red curry paste
  • 1 cup fresh Thai basil leaves
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Chop chicken into bite-sized pieces. Slice bell peppers and mince garlic and ginger.
  2. Heat oil in a large pan over medium heat. Sauté garlic and ginger until fragrant (about 1 minute).
  3. Add chicken pieces; cook until golden brown on all sides (approximately 5 minutes).
  4. Stir in red curry paste; cook for an additional 2 minutes.
  5. Pour in coconut milk gradually while stirring. Simmer for about 10 minutes.
  6. Add bell peppers and broccoli; simmer until tender yet crisp (about 5 minutes). Stir in fresh basil just before serving.
