  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fresh mozzarella cheese, sliced
  • 2 cups tomato sauce (marinara or homemade)
  • 1 cup fresh basil leaves
  • 9 no-boil lasagna noodles
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the chicken into bite-sized pieces and season with salt and pepper.
  3. In a skillet over medium heat, add olive oil and sauté the chicken until golden brown.
  4. Add minced garlic and cook for about one minute until fragrant, then stir in the tomato sauce and let simmer for five minutes.
  5. In a baking dish, layer as follows: spread some sauce on the bottom, add noodles, then layer with chicken mixture, mozzarella slices, and basil. Repeat until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil, sprinkle Parmesan on top, and bake uncovered for an additional 15-20 minutes until bubbly and golden brown.
  7. Allow to cool slightly before slicing. Serve warm.
