  • 4 medium carrots (chopped)
  • 4 medium Yukon Gold potatoes (quartered)
  • 2 large yellow onions (thickly sliced)
  • 4 cloves garlic (minced)
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp fresh rosemary (or 1 tsp dried)
  • 2 tbsp low-sodium soy sauce
  • 1 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Pat the chuck roast dry with paper towels. Season generously with salt and black pepper.
  2. In a skillet over medium-high heat, heat olive oil. Sear the roast for about 4-5 minutes on each side until browned.
  3. Transfer the roast to a slow cooker. Sauté onions and garlic in the same skillet until fragrant; add to the slow cooker.
  4. Surround the roast with carrots and potatoes.
  5. In a bowl, mix beef broth, soy sauce, thyme, and rosemary. Pour over the ingredients in the slow cooker.
  6. Cover and cook on low for 8-10 hours or high for 4-6 hours until fork-tender.
