  • 1 pound fresh green beans, trimmed
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced

  • ½ teaspoon black pepper
  • Juice of ½ lemon

Instructions

  1. Rinse the fresh green beans under cold water and trim both ends.
  2. Bring a pot of salted water to boil and blanch the green beans for 3-4 minutes until bright green but still crisp. Drain.
  3. In a large skillet over medium heat, heat olive oil and sauté minced garlic for about 30 seconds until fragrant.
  4. Add the blanched green beans to the skillet and toss to coat in the garlic oil.
  5. Season with salt and pepper, cooking for another 5-7 minutes until desired tenderness is reached.
  6. Just before serving, squeeze fresh lemon juice over the top and give it one final toss.
