- 8 oz penne pasta
- 2 cups mixed vegetables (bell peppers, zucchini, spinach)
- 24 oz marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tsp Italian herbs
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the penne pasta in salted boiling water until al dente; drain and set aside.
- In a skillet, heat olive oil over medium heat and sauté mixed vegetables for 5-7 minutes until tender.
- Stir marinara sauce into the sautéed vegetables and simmer for an additional 5 minutes.
- In a large bowl, combine cooked pasta with the vegetable-sauce mixture; transfer to a greased baking dish.
- Top with mozzarella and parmesan cheese, then bake for 25-30 minutes until bubbly and golden brown.
