Description

Easy Vegetable Pasta Bake is a comforting, cheesy dish brimming with fresh veggies, perfect for weeknight dinners or meal prep.


Ingredients

  • 8 oz penne pasta
  • 2 cups mixed vegetables (bell peppers, zucchini, spinach)
  • 24 oz marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian herbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the penne pasta in salted boiling water until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat and sauté mixed vegetables for 5-7 minutes until tender.
  4. Stir marinara sauce into the sautéed vegetables and simmer for an additional 5 minutes.
  5. In a large bowl, combine cooked pasta with the vegetable-sauce mixture; transfer to a greased baking dish.
  6. Top with mozzarella and parmesan cheese, then bake for 25-30 minutes until bubbly and golden brown.
