Description

Ingredients

  • 2 cups rotini pasta (uncooked)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1 cup bell peppers (diced)
  • ½ cup olives (sliced, pitted)
  • ½ cup feta cheese (crumbled)
  • ¼ cup olive oil
  • 2 tbsp vinegar (balsamic or red wine)
  • Salt and pepper to taste
  • ¼ cup fresh basil or parsley (chopped)

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and cool under cold water.
  2. While the pasta cools, chop cherry tomatoes, cucumber, bell peppers, and olives into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, vinegar, salt, and pepper.
  4. In a large bowl, combine cooled pasta with chopped veggies and feta cheese. Drizzle with dressing and toss gently to combine.
  5. Add fresh herbs on top and give it another gentle toss before serving.
  6. Chill in the fridge for at least 30 minutes before serving for enhanced flavors.
