  • 1/2 cup black olives (Kalamata preferred), pitted
  • 1/4 cup fresh parsley or mint, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Wash the cucumbers under cold water and slice into thin rounds or half-moons.

  4. Add chopped fresh herbs to the mixture.
