Ingredients

  • 1 cup fresh lemon juice (about 4 lemons)
  • 1 cup granulated sugar
  • 1 cup filtered water
  • 1 cup fresh basil leaves (packed)
  • 1/4 cup toasted pine nuts (for crunch) – optional

Instructions

  1. Wash and zest two lemons; then juice all four.
  2. Combine water and sugar in a pot over medium heat, stirring until dissolved. Add chopped basil leaves and simmer for 5 minutes. Remove from heat and cool.
  3. Strain basil from the syrup into a bowl, then mix in lemon juice.
  4. Refrigerate the mixture for at least 2 hours.
  5. Pour into an ice cream maker and churn until soft-serve consistency. Freeze for at least 4 hours before serving.
