  • 2 cups low-sodium beef broth
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp cornstarch mixed with 2 tbsp cold water
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the beef generously with salt and pepper. Sear until browned on all sides (about 3-4 minutes per side). Remove the beef and set aside.
  2. In the same skillet, add chopped onions and minced garlic; sauté until translucent.
  3. Add sliced mushrooms and cook until browned (around 5 minutes).
  4. Pour in the beef broth and soy sauce, scraping up brown bits from the skillet.
  5. Slowly mix in cornstarch slurry while stirring continuously; cook until thickened (about 2-3 minutes).
  6. Return beef to the skillet, spooning gravy over it. Cover and simmer on low for 30-40 minutes.
