  • 4 cloves fresh garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp extra virgin olive oil
  • 4 large organic carrots, sliced
  • 1 tbsp honey
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry and season generously with salt and pepper on both sides.
  3. In a skillet over medium heat, warm olive oil until shimmering. Add minced garlic and thyme; sauté for 1-2 minutes until fragrant.
  4. Add sliced carrots and honey; stir to coat and cook for about 5 minutes until slightly softened.
  5. Arrange seasoned chicken on one side of the baking sheet and place sautéed carrots on the other side.
  6. Bake for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and carrots are tender.
