  • 45 lbs pork shoulder
  • 6 garlic cloves, minced
  • 2 medium sweet onions, chopped
  • 1 tsp caraway seeds, crushed
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup low-sodium vegetable broth

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a roasting pan.
  2. In a bowl, mix garlic, salt, pepper, thyme, and caraway seeds.
  3. Pat the pork shoulder dry and rub the spice mixture all over it.
  4. Heat olive oil in a skillet over medium-high heat; sear pork on all sides until golden brown (3-5 minutes per side).
  5. Place seared pork in the roasting pan; surround with chopped onions. Pour vegetable broth into the pan halfway up the meat.
  6. Cover tightly with aluminum foil and roast for 3-4 hours or until fork-tender.
  7. Let rest for 15-20 minutes before slicing.
